Honest tradeoffs of kitchen granite

The bad news is real. Granite is porous enough to want sealing. If you skip sealer, or if sealer wears and you ignore it, oil, wine, and some foods can leave a dark spot. Sealing is ongoing work, not a one time event. Granite is generally heat tolerant, but a thermal shock from a very hot pan on a wet or cold area is still a risk in unusual cases. Edges can chip if you drop a cast iron skillet on a corner. Those chips can often be filled. They will still be visible if you look. That is normal stone behavior, not a defect we pretend is not there.

Seams are a tradeoff on most kitchens. A slab is only so large. An L shaped run or a big island usually needs at least one joint. You will see it in raking light.
